To manipulate motion in this picture I put the aperture at f/5.2 and had a focal length of 17.4mm to get a freeze-frame shot of the waterfall down the rocks.

Again nice composition with both of the waterfall pics. Both are visually pleasing for different reasons.
#1 Shows great motion. Maybe a closer shot would help the viewer see the motion even better. Also seems a little underexposed. In both pics it appears as if the viewer is right in the middle of the stream which is very dynamic (up close and personal). Maybe a shutter speed of 1/15 or 1/8 would have yielded a better (more impactful) image. You would then have to manipulate the aperture (or let the camera if you are on shutter speed priority) to keep a correct exposure.
#2 Nice composition. Get down low so it does not look like you simply stopped hiking and snapped the shot. I like how the water is running into the frame (lead room framing). Nice contrast between dark rocks and trees in the shadows with the light of the water and sun-light rocks. Adjusting the light and dark points would really make the whites and darks pop even more.
Good demonstration of DOF principles.
Crayons - Notice how the DOF is significantly increased by moving the aperture from f/2.8 (very wide opening) to f/11 (very small opening). Also because you were very close to the subjects the DOF is very shallow. A simple but effective way to manipulate DOF. You may want to review the DOF Powerpoint tutorial to keep these elements in mind as you prepare to shoot your final portfolio.
